Blue tea is made from the dried petals of the butterfly pea flower. When it steeps in water, it turns a deep blue. The Blue Tea pack is 10 g, which makes several cups.
How to brew
1. Use one teaspoon of dried flowers for one cup. 2. Heat water until it is hot but not boiling, around 90 degrees. 3. Pour the water over the flowers and steep for five to seven minutes. 4. Strain and serve warm or chilled.
The colour change
Add a few drops of lemon or lime and the blue turns purple or pink. This happens because the colour reacts to acid. It is a fun way to share the tea with family.
Serving ideas
- Add honey or a slice of ginger for flavour.
- Pour over ice for a cooling summer drink.
- Use it as a caffeine-free option in the evening.
Storage
Keep the dried flowers in an airtight jar, away from light and moisture.
